    Ingredients

    • 2 medium zucchini

    • 1 cup panko breadcrumbs

    • ½ cup freshly grated parmesan cheese

    • 1 tsp garlic powder

    • 1 tsp dried Italian seasoning (or dried thyme & oregano)

    • ½ tsp salt

    • ¼ tsp black pepper

    • 2 large eggs

    • Olive oil spray

    Instructions

    1. Prepare the zucchini
      Slice the zucchini into ¼-inch rounds. Pat them dry gently with a clean kitchen towel—this helps them crisp beautifully.

    2. Set up your breading station
      In one shallow bowl, whisk the eggs. In another, mix the panko breadcrumbs, parmesan, garlic powder, Italian seasoning, salt, and pepper.

    3. Coat with care
      Dip each zucchini slice into the egg, then press it into the breadcrumb mixture, making sure it’s fully coated. Lay the slices in a single layer on a plate while you work.

    4. Air fry to golden perfection
      Preheat your air fryer to 400°F (200°C). Lightly spray the basket with olive oil. Arrange the zucchini chips in a single layer (work in batches if needed), spray the tops lightly with oil, and air fry for 8–10 minutes, flipping halfway through, until golden and crisp.
