1 ½ pounds baby potatoes, quartered

For the Steak Bites
1 ½ pounds sirloin steak, cut into 1-inch cubes
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
4 tablespoons unsalted butter, divided
5 cloves garlic, minced
1 teaspoon Italian seasoning
1 tablespoon chopped fresh parsley, plus more for garnish
Instructions
Cook the potatoes
Heat 1 tablespoon olive oil in a large skillet over medium heat.
Add the quartered potatoes and season with salt, pepper, and garlic powder. Stir to coat.
Cover and cook for about 12-15 minutes, stirring occasionally, until the potatoes are fork tender.
Remove the lid and continue cooking for another 3-5 minutes, allowing the potatoes to become crispy and golden brown.
Transfer the potatoes to a plate and set aside.
Season the steak
While the potatoes cook, pat the steak dry with paper towels. This helps the steak develop a better sear.
Season the steak bites with salt, black pepper, and smoked paprika.
Sear the steak bites
Increase the skillet to medium-high heat and add another tablespoon of olive oil.
Once the skillet is hot, add the steak bites in a single layer. Avoid overcrowding the pan. If necessary, cook the steak in two batches.
Sear for approximately 1-2 minutes per side until browned on the outside and cooked to your preferred doneness.
Transfer the steak to the plate with the potatoes.
Make the garlic butter
Reduce heat to medium-low.
Add 3 tablespoons of butter to the same skillet. Once melted, add the minced garlic and Italian seasoning.
Cook for about 30-60 seconds, stirring constantly, just until the garlic becomes fragrant. Be careful not to burn it.
Bring everything together
Return the steak bites and potatoes to the skillet.
Add the remaining tablespoon of butter and the chopped parsley. Toss everything together until the steak and potatoes are evenly coated in the garlic butter.
